Chop block sizes are usually listed like this:

8" x 12"
The sizing is not the same as lumber or pavers. With chop blocks, the numbers describe the face height and the bed depth.
The first number is the approximate height of the front face.
The second number is the approximate depth, which is how far the stone goes from front to back.
The length is random and will vary from piece to piece.
For example, an 8" x 12" chop block means the stone has an approximate 8" tall front face and an approximate 12" depth from front to back. The left-to-right length is not fixed. Some pieces may be shorter, and some may be longer.
